Salumi Minozzi – Busseto, Parma

Traditional Cured Meats and Culatello di Zibello DOP

Located in Frescarolo, near Busseto, in the heart of the Bassa Parmense, Salumi Minozzi is a family-run producer specialising in traditional Italian cured meats, particularly the prestigious Culatello di Zibello DOP.

Founded in 1976 by Angelo Minozzi, the business has preserved the authentic traditions of Parma's artisan pork butchers, combining carefully selected ingredients, manual processing and natural ageing methods.

Today, the family tradition continues under the guidance of Pamela Minozzi and her husband Alberto, who maintain the original commitment to quality and respect for local gastronomic heritage.

Traditional Cured Meat Specialities

Salumi Minozzi produces a selection of traditional cured meats that represent the authentic flavours of the Bassa Parmense.

Its main specialities include:

  • Culatello di Zibello DOP: the company's flagship product, traditionally prepared and naturally aged to develop its delicate aroma and refined flavour.

  • Spalla Cruda di Palasone: an ancient speciality of the Parma lowlands, appreciated for its distinctive taste and traditional maturation.

  • Fiocchetto: a delicate cured meat obtained from a prized section of pork leg.

  • Strolghino: a traditional small salami with a soft texture and a relatively short ageing period.

  • Salame Nostrano: traditional local salami prepared according to artisan methods.

  • Coppa: a flavourful cured meat made from selected pork neck.

  • Pancetta: a classic Italian cured meat, appreciated for its characteristic aroma.

  • Mariola: a traditional speciality of the Bassa Parmense, particularly associated with winter cuisine.

  • Cotechino: a traditional pork speciality, generally enjoyed cooked during the colder months.

  • Cappello del Prete: a traditional stuffed pork speciality, particularly popular during the winter season.

The company states that its products are gluten-free and lactose-free.

Artisan Production and Natural Ageing

One of the most distinctive characteristics of Salumi Minozzi is its commitment to traditional production methods.

The company selects pork from animals born and raised in Emilia-Romagna or Lombardy, with processing carried out manually according to established local techniques.

The ageing process begins in a dedicated area beside the production workshop and continues in a centuries-old cellar, where the traditional brick floor and natural humidity contribute to the development of the cured meats' characteristic aromas.

This approach preserves the connection between the local environment, traditional craftsmanship and the distinctive flavours of Parma's cured meats.

Culatello di Zibello DOP and the Local Tradition

Salumi Minozzi has played an important role in promoting Culatello di Zibello DOP, one of the most celebrated gastronomic products of the Parma lowlands.

In 1996, the family business became one of the founding members of the Consorzio di Tutela del Culatello di Zibello, helping protect and promote this exceptional local speciality.

Culatello is traditionally produced using a carefully selected portion of pork leg, which is salted, seasoned, enclosed in a natural casing and aged under controlled traditional conditions.

The result is a refined cured meat closely associated with the unique climate and gastronomic heritage of the Bassa Parmense.
